Two simple casseroles or something I can eat during the week? No cauliflower.

I really don’t get burned out on food and can pretty much eat the same thing for a week or two without it bothering me. I’m doing IF and really don’t want to worry about dinner for me since I cook every night for my wife and kids. I eat cheese/meat snack at about 4pm and try to eat diner at about 6pm. Since I am only eating one big meal a day I was hoping someone would have some recipes that can fill all my Macros. 20 carbs/178 protein/142 fat. All I’m looking for is recipes I can adjust to fit my macros and and nutritionally pretty complete and I can cook Sunday night and eat through the week. Preferably two casseroles and I would switch each day.
