French-Style Chicken and Fennel Braise, plus a LCHF Dessert



As regular readers know, this blog brings a variety of recipe ideas, and it is always important to note, that not all may be suitable for you. If you may have any food allergies, or underlying health issues these must always be taken into account, and if you are a diabetic and not sure how certain foods may affect your blood sugars, then test is best, i.e. use your meter.

Now many diabetics, and those who live the LCHF or Keto lifestyle, do not include potatoes in their menu plans and this recipe suggestion does include salad potatoes! The original recipe shows carbs per serving as 27g so there may be readers who find it will not fit into their LCHF menu plans - but as always dear reader the choice is yours. 

Always remember that recipes can be amended slightly to suit your needs and adjust the carbs or nutrition requirements accordingly. If you would like a lower carb alternative to potatoes you will find some suggestions here

But let's get onto the recipe suggestion, it's something with a French Style … 
Ingredients:
Serves Two
tsp olive oil
4 shallots, halved
1 garlic clove, finely chopped
1 fennel bulb, cut into 8 wedges
4 pancetta rashers, cut into strips
2 small chicken breast fillets
1 x 400g tin chopped tomatoes
200g salad potatoes, halved
100g spring greens or shredded savoy cabbage

Method:
1. Heat the oil in a pan and add the shallots, garlic, fennel and pancetta. Cook for 5 minutes or until the vegetables start to lightly caramelise.
2. Add the chicken breasts and cook for 5 minutes, turning occasionally, until coloured. Add the tomatoes and 100ml water, then cover and simmer for 15 minutes or until the chicken is cooked through.
3. Meanwhile, cook the potatoes in a pan of boiling salted water for 15 minutes.  Add the greens and cook for 5 minutes more, then drain well and season.

4. Serve the chicken and fennel braise with the potatoes and greens on the side.
